Cumin (Cuminum cyminum L.) is one of the most consumed spices worldwide. In this study, seeds obtained from India, Iran, Syria, Pakistan, Afghanistan and Türkiye (Denizli) were used as materials. Different parameters including essential oil content (%), composition fixed fatty acid colour values (l, a, b), total phenolic substance (mg GAE/g dry herb) flavonoid CE/g determined. Result showed that in unground varied between 1.08% 4.68%, while, 3.20%-5.02% ground seeds. Gamma-terpinen-7-al, cuminal, gamma-terpinene beta-pinene prominent main compounds all cumin seed samples. The ranged 2.38% to 17.50% 2.25% 17.47% Six different acids found oil. Among these acids, oleic was component. Oleic level 56.63% 65.12%.
